One of Jane's favourite quick and easy recipes! Give it a try and see what you think.
Serves 3-4


  • 1 medium onion
  • 1 red/yellow/orange pepper
  • 1/2 Courgette
  • 1/2 Carrot
  • 4-5 Mushrooms
  • 1/2 tin of sweetcorn
  • Teriyaki sauce
  • Hoisin sauce
  • 1.5 pints of water
  • Noodles


  1. Peel and dice onion into small chunks, approximately 1cm.
  2. Deseed the pepper and chop into chunks.
  3. Put a small amount of oil in a pan, add onion and pepper to it and cook for approximately 7 minutes to allow the vegetables to soften but not brown.
  4. Add all of the water to the pan and bring to the boil
  5. Flavour the broth with a healthy dollop of Teriyaki sauce and Hoisin sauce (have a little taste to get the strength to your liking!)
  6. Finely slice the mushrooms and add to the broth
  7. Finely slice the courgette and add to the broth
  8. Using a vegetable peeler, peel ribbons of carrot and add to the broth
  9. Add the sweetcorn to broth
  10. Cover and simmer for 5 minutes
  11. Add noodles and cook for a further 2 minutes.
