Vegetable Ramen One of Jane's favourite quick and easy recipes! Give it a try and see what you think. Serves 3-4 Ingredients 1 medium onion 1 red/yellow/orange pepper 1/2 Courgette 1/2 Carrot 4-5 Mushrooms 1/2 tin of sweetcorn Teriyaki sauce Hoisin sauce 1.5 pints of water Noodles Method Peel and dice onion into small chunks, approximately 1cm. Deseed the pepper and chop into chunks. Put a small amount of oil in a pan, add onion and pepper to it and cook for approximately 7 minutes to allow the vegetables to soften but not brown. Add all of the water to the pan and bring to the boil Flavour the broth with a healthy dollop of Teriyaki sauce and Hoisin sauce (have a little taste to get the strength to your liking!) Finely slice the mushrooms and add to the broth Finely slice the courgette and add to the broth Using a vegetable peeler, peel ribbons of carrot and add to the broth Add the sweetcorn to broth Cover and simmer for 5 minutes Add noodles and cook for a further 2 minutes. Serve and enjoy!
