Michele has provided this recipe for a quick and tasty midweek supper.

Ingredients

  • 1 pack of ready rolled puff pastry
  • 1 log of firm Goats cheese sliced into about 15 slices 
  • 3 large onions sliced into half moons
  • Salt and pepper 
  • 3 heaped teaspoons of sugar 
  • Splash of balsamic vinegar (optional) 

Method

  1. Roll out the pastry leaving it on the paper,  put it on a baking tray. 
  2. Score a 1inch frame around the edge with a blunt knife. Then prick the base within the frame with a fork.
  3. Put a knob of butter in a frying pan on a medium heat. Add a dash of oil. Then add the sliced onion. Season with salt and pepper.
  4. Stir to pick up the oil and butter then pop a lid on, and let cook for 10 minutes checking and stirring now and again.
  5. After 10 mins take off the lid and continue to let it cook, add the sugar and stir it through and the vinegar if adding.
  6. When the onions have cooked down and are soft and brown take it off the heat.
  7. Spread the onions over the pastry within the score lines and top with the Goats cheese.
  8. Pop in to a preheated oven at 180 degrees for 25 to 30 minutes. The pastry should be puffed up and crispy.
