Ingredients

  • 225g plain flour

  • 85g caster sugar

  • ½ tsp baking powder

  • pinch of salt
  • ½ tsp mixed spice

  • 50g butter in small chunks

  • 50g lard in small chunks, plus some for frying

  • 50g currants

  • 1 beaten egg

  • a little milk if necessary

Method

Tip the flour, sugar, baking powder, mixed spice and a pinch of salt into a bowl.

Rub the butter and lard into the dry ingredients until it is combined and crumbly.

Mix in the currants.

Add the beaten egg into the mixture until it forms a soft dough, you can add a little milk if it seems too dry.

Roll out your dough on a lightly floured surface to the thickness of your little finger.

Use a 6cm round cutter and cut out your Welsh cakes, keep combining and rolling the trimmings until all the mixture is used.

Grease a heavy frying pan with the lard, and place it over a medium heat.

Cook the Welsh cakes in batches, for about 3 mins each side, until golden brown, crisp and cooked.

Serve them warm or cold with butter and jam, or sprinkle some caster sugar on. Perfect with a cup of tea!
