Welsh Cakes You may have been to a Neuro Therapy Centre event where Shannah has made her Welsh cakes, now you can try them for yourself by following her easy step recipe. Ingredients 225g plain flour 85g caster sugar ½ tsp baking powder pinch of salt ½ tsp mixed spice 50g butter in small chunks 50g lard in small chunks, plus some for frying 50g currants 1 beaten egg a little milk if necessary Method Tip the flour, sugar, baking powder, mixed spice and a pinch of salt into a bowl. Rub the butter and lard into the dry ingredients until it is combined and crumbly. Mix in the currants. Add the beaten egg into the mixture until it forms a soft dough, you can add a little milk if it seems too dry. Roll out your dough on a lightly floured surface to the thickness of your little finger. Use a 6cm round cutter and cut out your Welsh cakes, keep combining and rolling the trimmings until all the mixture is used. Grease a heavy frying pan with the lard, and place it over a medium heat. Cook the Welsh cakes in batches, for about 3 mins each side, until golden brown, crisp and cooked. Serve them warm or cold with butter and jam, or sprinkle some caster sugar on. Perfect with a cup of tea!
