Follow Sam's recipe to create a new take on a burger meal.

This recipe can easily be sized up to create as many burgers as you need.

You will need:

  • Small bag of new potatoes
  • Burger bun
  • Cheddar cheese
  • Chicken breast
  • Ripened avocado
  • 1 lime
  • Olive oil
  • Punnet of baby plum tomatoes
  • Salt and pepper

Method:

1. To make the wedges…

Preheat oven to 200 degrees Celsius. Wash and chop the potatoes into 2cm thick wedges (no need to peel). Place wedges on a foiled and lightly oiled baking tray. Drizzle with more oil and season with salt and pepper. Roast for 25-30 minutes or until golden brown.

2. For the tomato salad side…

Zest and halve the lime. Chop the plum tomatoes in halves and pop them into a bowl. De-stone the avocado and place half on a chopping board. Chop half the avocado into 2cm chunks, then toss into to the bowl of tomatoes. Add half of the lime juice and a drizzle of olive oil. Season with salt and pepper.

3. Prep the smashed avocado…

Roughly chop and mash with a folk the remaining avocado. Add the remaining halve of the lime juice. Season with salt and pepper.

4. For the burger…

Add oil to a frying pan and fry both sides of the chicken breast on a medium to high heat, approximately 8-10 minutes each side. IMPORTANT: Ensure the chicken is no longer pink in the middle, juices run clear and it is hot throughout. Once cooked, reduce the heat and sprinkle cheddar cheese on top to melt for 2-3 minutes.

Assemble the chicken burger and add the smashed avocado on top. Serve with the wedges and tomato side salad. Add mayonnaise or burger sauce if desired.
